Spinach Omelet
Ingredient List :
2 eggs
1 bunch spinach leaves, rinsed and cut into pieces
1 _ tbsp Parmesan cheese (grated)
_ tsp onion powder
1/8 tsp ground nutmeg
Dash of salt and pepper

Directions :
In a medium bowl beat the eggs, then add the baby spinach, Parmesan cheese, onion powder, nutmeg, salt and pepper. Pour egg mixture into a small skillet coated with cooking spray and cook over medium heat for about 3 minutes. Flip the partially cooked omelet and continue to cook for another 2-3 minutes. Turn the heat to low and continue to cook for 2-3 minutes or until desired texture is reached.
